Rhubarb is a chef-driven, farm-to-table restaurant in the heart of downtown Asheville serving modern Appalachian cuisine with genuine hospitality. What does that mean? That at Rhubarb, we believe in people-first hospitality from our employees to our farm partners to our guests. We are hiring a Sous Chef, but the person will always come before the role.
The Person
As a Sous Chef at Rhubarb, you champion Southern foodways with modern sensibilities. You believe that the whole process is important when it comes to dining: from sourcing our produce and proteins locally and farm-direct with sustainability, to working as a team to execute a consistent experience for our guests. You are an autonomous person but enjoy working in a small team. You have probably been in kitchens for a long time but are looking for one where you can learn something new, have creative input, and/or never use a microwave at work again.
The Role
- Assist the Executive Chef in leading the department which includes whole animal butchery, charcuterie production, recipe development, prep for Rhubarb, The Rhu, and the Events program, and working with the best produce, proteins, and products Appalachia has to offer
- Manage and assist with service, as well as training and mentoring a small team of Prep and Line Cooks. Sous Chefs should feel comfortable with both prep and working a station in a brigade style kitchen.
- Assist with inventory and ordering of BOH needs
- Aid in recipe development, ensure consistency of dishes, communicate menu changes, and support FOH with dietary restriction information
- Support the culinary team in a variety of stations/roles/recipe execution
The Qualifications
- At least 2 years of culinary experience in a full-service restaurant
- At least 1 year of prior supervisory experience/people management
- Strong knife skills
- Ability to stand for long periods of time
- Lift up to 50lbs
- Sense of humor
