Marugame Udon is a fast-growing international brand serving handmade Sanuki Style udon and crispy tempura. We are searching for leaders that can join our value-based team in the pursuit of our vision of “creating moments of joy through the culture of Omotenashi and the comfort of handcrafted udon.” Marugame Udon currently has 14 restaurants located in California, Hawaii, and Texas.

 


Position Description:

 

The General Manager is responsible for managing daily operations of the restaurant, including selection, development, and performance of employees and managers. In addition, they are responsible for overseeing inventory, managing sales and COGs, optimizing profits, and ensuring customer satisfaction.

 


Job Responsibilities:


Financial:

  • Adhere to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, utility, and labor costs.    
  • Responsible for reviewing and approving that all financial (invoices, reporting) and personnel / payroll-related administrative duties are completed accurately, on time, and in accordance with company policies and procedures and federal, state, and local laws.

Food and Workplace Safety and Planning:      

  • Enforce sanitary practices for food handling, general cleanliness, maintenance of kitchen and dining areas, and clean and proper uniforms for all employees. Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances.
  • Responsible for ensuring consistent high quality of food presentation and service. Estimate food needs, place orders with distributors, and schedule the delivery of fresh food and supplies.

Guest Service:    

  • Ensure positive customer service in all areas. Respond to complaints, taking any and all appropriate actions to turn dissatisfied customers into return customers.   
  • Drive and maintain excellent customer sentiment.

Operational Responsibilities:

  • Responsible for the communication, training and facilitation of all company initiatives, rollouts, marketing promotions, etc.
  • Ensure that proper security procedures are in place to protect employees, customers, and company assets.
  • Ensure a safe working and customer environment to reduce the risk of injury and accidents.
  • Manage shifts which include daily decision making, scheduling, and planning while upholding standards, product quality, and cleanliness.  
  • Proactively resolve customer complaints concerning food quality and service. Direct liaison for all vendor relationships.   
  • Review and audit operational reports such as P&L statements, budgets, inventory, etc.

Personnel:

  • Must be able to recruit and retain employees for new restaurant opening using best hiring practices and keep a turnover rate of 25% or less.
  • Manage the employee life cycle including recruiting, interviewing, onboarding, training, coaching, disciplinary action, and termination.
  • Hiring and onboarding all new management trainees for the market and ensuring proper execution of related MIT training program.
  • Develop employees by providing ongoing feedback, establishing performance expectations, and conducting performance reviews.
  • Maintain an accurate and up-to-date plan of restaurant staffing needs. Prepare schedules and ensure the restaurant is staffed for all shifts.

Accountabilities:

  • Responsible for keeping Area Director and Other Senior Management promptly and fully informed of all issues (ie. Problems, unusual matters of significance, and positive events) and takes prompt corrective action where necessary or suggests alternative courses of action.     
  • Completes job responsibilities and performance objectives in a timely and effective manner and in accordance with company policies and procedures.

Qualifications:

  • Must have a minimum of 5 years of experience as a General Manager.         
  • Must have a minimum of 7 years of experience in the restaurant industry.       
  • Must be able to perform basic math calculations and understand finances and cost management.
  • Excellent communication skills, both written and verbal.  
  • Must be able to travel for 4 months during training period.       
  • Multi-unit (2 or more locations) experience is a plus.

Competencies:

 

Education/Experience/Knowledge:

  • Preferably the candidate should have extensive management and leadership experience Including involvement in a minimum of 1 new restaurant opening.
  • The General Manager candidate will have demonstrated the ability to consistently execute all service, hospitality, menu, and facility standards as well as consistent achievement of desired financial results.
  • The General Manager candidate will have extensive experience in developing people, including hourly staff and management. This candidate will furthermore have experience in developing people in both their current role as well as preparing them for roles with increased responsibility.    
  • The ideal candidate must work effectively in a high-energy, self-directed, and dynamic environment.
  • The ideal candidate must be a strong problem solver that is solution oriented and works with a since of urgency to ensure problems are solved in a timely manner.
  • The ideal candidate will have extensive experience in coaching employees and handling difficult employee related situations.

ADA Notification:

  • Must be able to reach, bend, balance and transport various objects weighing up to 40 lbs. repeatedly during a shift.  
  • Must be able to speak clearly and listen attentively to Team Members, the Management Team, and Customers.     
  • Ability to work around various levels of temperature, including warm to very warm temperatures in the kitchen.    
  • Must be able to stand and walk for periods of 8 to 12 hours per shift.   
  • Able to understand and follow the work schedule.
