Salad & Sandwich cooks are responsible for the daily preparation and execution of all food items in the cold / hot station and assisting in other areas of the kitchen.
LINE COOK TASKS INCLUDE, BUT ARE NOT LIMITED TO:
- Setting up stations according to restaurant guidelines
- Preparing all food items as directed in a sanitary and timely manner
- Restocking all items needed throughout shift
- Cleaning and maintaining stations while practicing good safety, sanitation and organizational skills
- Assisting with the cleaning, sanitation, and organization of kitchen, walk-in coolers and all storage areas
- Performing additional responsibilities as requested by the Kitchen Manager
- Adhering to all Spinato’s Specifications and Recipes
- Adhering to all Spinato’s Policies and Procedures as stated in your employee handbook
- Adhering to all proper food handling procedures as set forth by the local Health Board Agency
Station Roles
Salad:
- Will plate and sell all tickets on salad line
- Demonstrate correct knowledge on ticket priorities
- Understand when to sell tickets without being prompted by expo
- Make all desserts
- Effectively float to sandwich station or assist in prep when station is slow
Sandwich:
- Plate and sell all tickets on sandwich line
- Demonstrate correct knowledge of ticket priorities
- Thoroughly read tickets and take lead on firing of any non-pizza tickets
- Effectively float to salad station or assist in prep when station is slow
Float:
- Goes between both salad and sandwich station assisting with tickets or prep
- Show knowledge of which station needs most attention and know correct priorities of what needs to be done
- When both stations do not need help assist rest of kitchen or dish with what needs to be done
