a positive, professional, and upbeat demeanor helps set a pleasant tone for
guests.
·
Speed
is most important just after guests are seated.
Water glasses and bread are part of that, but beverage orders are
key. Speedy beverage orders, delivery

·
Being
able to accurately describe standard menu items and specials is a must. The best servers describe menu items as if he
or she had prepared them, detailing cooking method, special sauces, etc. The ability to politely suggest preparation
alternatives to meet your guest’s dietary needs is important too.
·
Continual
circulation is part of the communication process. Make you’re your guests feel as if they are
your only table. Always being available
to guests, checking in on food preparation (“Is your steak medium rare?”) will
detect errors early and allow them to be corrected.
·
Serving
